Orange and Garlic Roasted Chicken, Black and Brown Rice with Sweet Potatoes

Orange and Garlic Roasted Chicken

1 3-4lb Whole Chicken
1 Tbsp Salt
1/2Tbsp Cracked Black Pepper
4 Garlic Cloves-crushed
1 Orange-cut into quarters
Zest of Orange

Preheat oven to 375.
Remove Chicken from package, rinse and pat dry. Sprinkle the salt and pepper on the outside and in the cavity of the bird. Coat the top of chicken with orange zest. Stuff the chicken with the oranges and garlic. Cook uncovered for an hour. Cover and let stand for 15 minutes. Enjoy!


Black and Brown Rice with Sweet Potatoes

1 Medium Sweet Potato-diced
1/2 Cup Black Rice-you can use wild if you like
1/2 Cup Brown Rice
2 Tbsp Whole Grain Mustard
21/4 Cup Chicken Broth
3 Green Onions-chopped
Salt and Pepper to taste

Spray pot with PAM and heat. Add sweet potatoes and cook for 3-5 minutes. Add rice, mustard adn broth. Bring to a boil, reduce heat and cover for 45 minutes. when rice is finished stir in green onion, salt and pepper.
