Lentil, Bulgar and Spinach Salad

Lentil, Bulgar and Spinach Salad
Serves 4

1 Cup Cracked Bulgar Wheat-cooked according to package
1 Cup Lentils-cooked according to package
1 Bag Spinach-cleaned
1 Garlic Clove-diced
1/2 Cup Cherry Tomatoes-sliced in half
1/4 Cup Red Wine Vinegar
2-3 Tbsp Olive Oil
Salt and Pepper to taste-forgot to measure:)

Heat a saute pan on medium with a splash of olive oil. Add garlic and cook for 2-3 minutes, toss in spinach and slightly wilt...do not overcook spinach. Remove from heat and add to mixing bowl with Bulgar, lentils and cherry tomatoes. Stir in vinegar and olive oil. Season with salt and pepper. Enjoy!
