Red Potato, Onion and Cabbage Hash


Red Potato, Onion and Cabbage Hash

Serves 4

3-4 Medium Red Potatoes-sliced in rounds
1/4 Cup Yellow Onion-diced
5 Garlic Cloves-chopped
1/4-1/2(1-2 Cups) Head Cabbage-shredded
1 Tbsp Olive Oil
Splash White Wine
Salt and Pepper to taste

In a medium saute pan heat olive oil. Add onion and garlic and cook until aromatic, about 7 minutes. Add potatoes, arranging so they are not layered on top of one another. Cook potatoes for 10 minutes, stirring frequently. Add splash of wine and continue to cook. Add cabbage and cook another 10-15 minutes. The potatoes will be al dente. If you prefer them softer, add a splash of water and cook longer. Season with salt and pepper. I added a lot of pepper, because we like the extra heat. Enjoy!
