Turkey Bacon Wrapped Chicken Breast with Maple Orange Sauce

Serves 2

2 Boneless Skinless Chicken Breast
2 Slices Thick Cut Turkey Bacon-Applegate Farms or similar
1 Tbsp Maple Sr yup
1 Tbsp Orange Juice
1 tsp Dijon Mustard
Salt and Pepper to taste

Preheat oven to 350. Season chicken breast with salt and pepper. Wrap bacon around breast. If you want to use more bacon, go for it. In a small bowl mix syrup, OJ and Dijon, set aside. Heat saute pan on medium high with cooking spray or olive oil. Sear chicken breast on each side for 5 minutes. Bacon will crisp, but watch so that it doesn't burn. Remove from heat, brush with maple orange juice, cover and place in oven. Cook in oven for 15 minutes. Uncover, drizzle remaining sauce on chicken and cook for an additional 5-10 minutes. Plate chicken and spoon sauce over. If you do not have much sauce in pan, add a little water and let it reduce for a minute or so. Enjoy!

I served this with red potato, onion and cabbage hash. Recipe to follow.
