Healthier Migas



This recipes can be changed in many ways depending on what you like. I baked the tortillas instead of frying so they wouldn't be so fattening. I'm also dairy free so only topped half the pan with cheese. We like spicy food so I added more jalapeno. Hope you enjoy as much as we did!

Migas
Serves 4

4-5 Corn Tortillas-baked and broken
1 Cup Yellow Onion-diced
1/4 Cup Green Pepper-diced
2-4 Jalapeno Peppers-seeded and diced
1 Cup Diced Tomato
8 Eggs
1/4 Cup Milk
Salt and Pepper to taste
Oil or Cooking Spray

Garnish
1/4 Cup Cilantro
1 Cup Cheddar Cheese
1 Cup Prepared Red or Green Salsa


Whisk together eggs and milk and set aside. Heat cast iron skillet on medium with cooking spray or oil. Add onion, and peppers and saute until aromatic(about 5-8 minutes). Add diced tomato and stir. Add eggs mixture, season with salt and pepper and cook on medium for about 10-15 minutes or until eggs are cook through, but not brown. Top with cheddar cheese, salsa and cilantro. Serve with warm tortillas, refried beans or even diced potatoes.
