Italian Turkey Sausage and Peppers


Italian Turkey Sausage and Peppers
Serves 4

1 Package Fresh Italian Turkey Sausage-5 links
1 Medium Red Pepper-sliced
1 Medium Yellow Onion-sliced
1/2 Medium Red Onion-sliced
3 Cloves Garlic-chopped
1 Pint Cherry Tomatoes
1/2-3/4 Cup Tomato Sauce
1/4 Cup Fresh Basil-chopped
1 tsp Crushed Red Pepper
1 tsp Salt
1/4 tsp Pepper
Olive oil or cooking spray

Remove sausage from package and poke a few holes in them. Boil on high heat for about 15 minutes. Drain and cool. Once cool, remove the casing, slice thick and reserve. Meanwhile heat a little olive oil or cooking spray in a saute pan. Add garlic and cook on medium heat for about 2-3 minutes. Add onions and peppers and
cook for until they begin to caramelize. Add cherry tomatoes and cook for 5 more minutes. Add sausage, crushed red pepper, tomato sauce, salt and pepper, cover and reduce heat to low and cook for 20 minutes. Serve over rice, pasta or mashed potatoes. We had them over the roasted garlic mashed potatoes and it was delish!
