Honey Dijon Pork Loin, Roasted Red Potatoes with Cajun Ketchup



Honey Dijon Pork Loin
Serves 6

1 3lb Boneless Pork Loin
1/2 Cup Dijon
1/2 Cup Honey
6oz Dark Beer
1 tsp Salt
1/2 tsp Pepper
10 Garlic Cloves

Cut down the middle of the pork and stuff with garlic cloves. In a bowl mix together mustard, honey, beer, salt and pepper. Place pork in marinade and cover. Let sit in fridge for at least 4 hours. Remove pork from marinade and grill. If your pork has any fat on it be careful that it does not burn.....I let mine burn! I cooked on the grill for about 15 minutes then finished in a 350 degree oven for about 20-25 minutes.

Oven Roasted Red Potatoes with Cajun Ketchup
Serves 4

10 Red Potatoes-quartered
1-2 Tbsp Olive Oil
1/2 tsp Salt
1/4 tsp Pepper
1/4 tsp Garlic Powder

Preheat oven to 350. Toss all ingredients and put on cookie sheet. Cook in oven fro about 40 minutes.

Cajun Ketchup
1/2 Cup Ketchup
Dash Worcestershire Sauce
1 Tbsp Blackened Seasoning

Mix all ingredients in a bowl.

  1. Your dishes always look amazing! Some really great ideas for me to try out! My only suggestion is writing the name of the dish in the title where you put the date so it is easier for us to search on the left side. I like to search by name... just a suggestion :o)
