Healthier Migas

This recipes can be changed in many ways depending on what you like. I baked the tortillas instead of frying so they wouldn't be so fattening. I'm also dairy free so only topped half the pan with cheese. We like spicy food so I added more jalapeno. Hope you enjoy as much as we did!

Migas
Serves 4

4-5 Corn Tortillas-baked and broken
1 Cup Yellow Onion-diced
1/4 Cup Green Pepper-diced
2-4 Jalapeno Peppers-seeded and diced
1 Cup Diced Tomato
8 Eggs
1/4 Cup Milk
Salt and Pepper to taste
Oil or Cooking Spray

Garnish
1/4 Cup Cilantro
1 Cup Cheddar Cheese
1 Cup Prepared Red or Green Salsa

Whisk together eggs and milk and set aside. Heat cast iron skillet on medium with cooking spray or oil. Add onion, and peppers and saute until aromatic(about 5-8 minutes). Add diced tomato and stir. Add eggs mixture, season with salt and pepper and cook on medium for about 10-15 minutes or until eggs are cook through, but not brown. Top with cheddar cheese, salsa and cilantro. Serve with warm tortillas, refried beans or even diced potatoes.

Nacho Chicken Casserole

I am a little OCD when it comes to my kitchen....it is like my office and I do not like it to be dirty and it is very well organized. I keep all boxed or bagged food in air tight plastic containers. Yes, I know they should be in glass to avoid any cancer sipping toxins to get in my food, but plastic is what I have so plastic is what I use. There is always an abundant amount of broken chips in the bottom of the chip container. Naturally I set out to create recipes to utilize the chips, and get my money's worth from every bag. Last night I created a yummy dinner with my broken chips. Hope you enjoy too!

Nacho Chicken Casserole
Serves 4-6

2-3 Chicken Breast-medium-large dice
1/4 Cup Onion
2 Garlic Cloves
1 Can Black Beans-drained
2 Medium Red Potatoes-small diced
1 Can Diced Tomatoes-drain almost all liquid
1/4 tsp Cayenne Pepper
2 tsp Cumin
1 Tbsp Chili Powder
1/2 tsp Paprika
1 tsp Salt
3 Cups Broken Tortilla Chips
1 Can Red Enchilada Sauce
Cheddar Cheese-optional

Preheat oven to 350. Heat a little oil in saute pan on medium heat and add garlic and onion. Cook until aromatic, then add chicken and potatoes. Cook chicken for 5-10 minutes and then add black beans and diced tomatoes. Stir together and add in all spices. Cover and simmer for 15-20 minutes or until potatoes are soft. Put 1 1/2 cups of broken chips in the bottom of an 8" square pyrex dish. Pour chicken mixture over chips, (add cheddar at this point if you wish) top with the remaining chips and pour enchilada sauce over the top layer of chips. Bake in the oven for 10 minutes. Remove and garnish the way you like to eat your nachos!

Optional Garnishes: Shredded Lettuce, Diced Tomato, Diced Onion, Sour Cream, Cheese, Jalapeno, Avocado, Black Olives

Taco Salad

This is more of an idea, however I will give you the recipe I created when making our taco salads. The best part is that you will not feel guilty eating the taco bowl, because it is just a baked tortilla! You can easily make this with a taco seasoning packet, however those packets are loaded with sodium. If you find that you cook a lot of meals with a Spanish flavors, make a batch of this spice mixture to keep in your pantry. If you are interested in a large batch recipe comment on this post and I will make one for you.

Taco Salad

1 lb Ground Meat
1 Tbsp Cumin
2 tsp Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Paprika
1/2 tsp Salt
1/4 tsp Pepper
1/2 Can or 1 Cup Black Beans
3 Tbsp Water
4 Large Flour Tortillas
1 Small to Medium Stainless Steel Bowl

Optional Salad Fixings
2-3 Cups of Shredded Romaine
1 Small Can Sliced Olives
Shredded Cheese
1/4 Cup Onion-Diced
Jalapeno
Avocado

Dressing
Equal Parts Low Fat Sour Cream and Salsa

Preheat oven to 375.

Place tortilla in bowl and cook in oven for 10-12 minutes, checking often as not to burn it. Repeat with all tortillas or if you have more than 1 bowl do a few at a time.

Heat saute pan on medium heat and add ground meat. Cook and drain any fat from meat in a colander. Use a clean paper towel to wipe an excess fat out of pan. Add meat back to pan and sprinkle in all spices. Mix and add black beans and water. Cook for 5-10 minutes.

Assemble Salad in tortilla bowl, top with dressing and ENJOY without feeling guilty!

Pulled Pork Tacos, Grilled Corn and Mango Salsa

I have a ton of recipes to add, I have just been so busy that I have not added them. I will add one tonight and get the rest on here in the next few days. I have a friend coming to visit this weekend and will be doing some good cooking so look for those recipes next week. I have been a little obsessed with pork lately, which is odd because I really only like it a little...so I think. I raised pigs every year in H.S. and did not eat pork for years, you see I was afraid that it might have been Petunia, Grover, or Ricochet on my plate. Now I enjoy pork, however have to really be in the mood for it. This recipe is delicious and easy to make. I typically start cooking this dish around 4:30 in the afternoon and it is done by 6:00-6:30pm.

Pulled Pork Tacos with Grilled Corn and Mango Salsa
3lbs Pork-butt, tenderloins or boneless loin

1/2 Tsp Garlic Powder
1 Tsp Paprika
1/2 Tsp Cinnamon
1/4 Tsp Salt
1/4 Tsp Pepper

1 Can Green Enchilada Sauce

Preheat oven to 250. Mix all dry spices in a bowl. Rub the pork with dry spices. Sear pork in a pan on medium to high heat. Add enchilada sauce. Remove from heat and cover. Put pan in the oven and cook for 2 hours. When done, shred pork with two forks. Serve pork in warm corn tortillas with mango corn salsa.
*I use a Le Creuset to cook the pork
