Stuffed Squash with Ground Turkey and Quinoa


I bought these beautiful patty pan squashes at the Farmer's market and thought stuffing them would be my best option. It is very unlikely that you will find them this big so this stuffing can be used in a bell pepper or eaten by itself. Enjoy!

Stuffed Squash with Ground Turkey and Quinoa
Serves 4

1lb Ground Meat
1/4 Cup Red Bell Pepper-diced
2 Garlic Cloves-diced
1/4 Cup Yellow Onion-diced
1/4 Cup Yellow Squash-diced(I used the the squash that I scooped out) optional
1/2 Cup Quinoa-cooked-you can use the grain you like such as rice or barley
1 Cup Tomato Sauce
1 tsp Salt
1/2 tsp Pepper
1 tsp Paprika

Preheat oven to 350. Scoop out center of squash or cut pepper in half and remove the insides. Arrange on baking sheet and put in preheated oven for 10 minutes., while you are getting meat ready. Brown and drain ground meat. Add a little olive oil or PAM to saute pan and add bell pepper,garlic, yellow onion, and squash. Cook for 3-5 minutes. Return meat to pan and add tomato sauce, salt, pepper and paprika. Cover and simmer for 15 minutes. Remove squash/bell pepper from oven and fill with meat mixture. Return to oven and cook for an additional 5-10 minutes.
