Mustard Chicken with Artichoke and Diced Tomato


Mustard Chicken with Artichoke and Diced TomatoServes-4

2 Chicken Breast-large diced
2 Roma Tomatoes
1 Jar Marinated Artichoke Hearts-liquid reserved
2 Garlic Cloves
1/3 Cup White Wine
2 Tbsp Whole Grain Mustard
1/4 Cup Chicken Broth
1/4 Cup Artichoke Liquid
1/8 Cup Sour Cream-optional
1/2 tsp Salt
1/4 tsp Pepper

Heat a medium saute pan and add a drizzle of olive oil spray with cooking spray. Add garlic and cook for 2 minutes, do not brown. Add chicken and cook utnil it turns white. Add in wine and reduce for 5 mintues. Add mustard, artichokes, liquid and chicken broth. Cover and cook for 10 minutes. Toss in diced tomato, salt and pepper. Remove from heat and stir in sour cream if you wish. Serve over egg noodles or brown rice. Shown with brown rice, black barley mixture.
