It has been a long couple of weeks, however I the fire still burns in the kitchen. I have created some really yummy meals over the last week. I have also learned to spruce up my blog a little, thanks for the pointers babycenter friends! So without all the rambling tonight here are the recipes. As always make them your own!
This is a recipe that my friend in Houston made for me last time I was home. It has become a favorite in our house. She used pork sausage and bowtie. I always use turkey to be a little healthier and I used whole wheat penne this time.
Turkey Italian Sausage with Roasted Red Pepper, Cherry Tomatoes over Penne
1 lb/4-5 Links- Italian Turkey Sausage-removed from casing
1 Medium Red Pepper-Roasted, Skin removed, peeled and diced
1 Carton Grape Tomatoes
1 15oz Can Tomato Sauce
1oz Goat Cheese-optional
1 lb Penne or Bowtie
Fresh Basil-chopped for garnish
Brown sausage, drain and set aside. Roast, peel, seed and dice pepper. Drizzle pan with olive oil add pepper, and tomatoes on low heat. Let the tomatoes breakdown a little and then add tomato sauce and sausage. Season with salt and pepper. Just before serving add in goat cheese. Toss with or pour over pasta. Garnish with fresh basil.
