I have a ton of recipes to add, I have just been so busy that I have not added them. I will add one tonight and get the rest on here in the next few days. I have a friend coming to visit this weekend and will be doing some good cooking so look for those recipes next week. I have been a little obsessed with pork lately, which is odd because I really only like it a little...so I think. I raised pigs every year in H.S. and did not eat pork for years, you see I was afraid that it might have been Petunia, Grover, or Ricochet on my plate. Now I enjoy pork, however have to really be in the mood for it. This recipe is delicious and easy to make. I typically start cooking this dish around 4:30 in the afternoon and it is done by 6:00-6:30pm.
Pulled Pork Tacos with Grilled Corn and Mango Salsa
3lbs Pork-butt, tenderloins or boneless loin
1 Tbsp Cumin
1 Tsp Chili Powder
1/2 Tsp Garlic Powder
1 Tsp Paprika
1/2 Tsp Cinnamon
1/4 Tsp Salt
1/4 Tsp Pepper
1 Can Green Enchilada Sauce
Preheat oven to 250. Mix all dry spices in a bowl. Rub the pork with dry spices. Sear pork in a pan on medium to high heat. Add enchilada sauce. Remove from heat and cover. Put pan in the oven and cook for 2 hours. When done, shred pork with two forks. Serve pork in warm corn tortillas with mango corn salsa.
*I use a Le Creuset to cook the pork
Grilled Corn and Mango Salsa
2 Ears of Corn-grilled and cut of cob
1 Mango-peeled and diced
2-3 Green Onions-chopped
2Tbsp Chopped Cilantro
Salt and Pepper to taste
Mix all ingredients in a bowl. Serve on top of tacos.
Watermelon Margarita
8 Cups Watermelon-pureed and strained
1 Cup Simple Syrup* with Orange Rind
2 Cups Fresh Lime Juice
12-14oz Tequila
Mix all ingredients in a pitcher, stir, chill and serve with salted or sugared rim glass.
*Simple Syrup-1 cup sugar 1 cup water, heat until sugar dissolves, add orange rind when heating
