Salmon Cakes with Caper Mayo


Good Evening All.
It has been a few weeks since I last added a recipe, sorry about that. As always summer is jammed packed with activities. I have been cooking, however have not found the time to sit down and add them. Here are two of our favorites,salmon cakes and faux fried turkey steaks. Salmon Cakes
Makes 6 cakes

2lb Fresh Salmon-boiled
2 Stalks of Celery-diced
1/4 Cup Diced Onion-diced
4 Green Onions-chopped
1/2 Jar Capers-chopped-optional
2 Heaping Tbsp Lite Mayo
1 Heaping Tbsp Whole Grain Mustard-I use Maille
1/4 Cup Bread Crumbs
1 Egg
1tsp Old Bay Seasoning
Couple Dashes Tabasco
1/4 Tsp Salt
1/4 Tsp Pepper
Bread Crumbs for coating cakes

Boil the salmon for about 20-30 minutes. Drain off water, remove skin and add to a mixing bowl. Add in all the ingredients and mix. Form 6 cakes and dredge through breadcrumbs. Heat a non stick skillet with olive oil or pan and add your cakes. Turn after a few minutes to allow both sides to brown. Serve with Caper Mayo.

Caper Mayo

1 Cup Mayo
1 Lemon Juiced
1/2 Jar Capers-chopped
Couple dashes of Old Bay and Tabasco, Salt and Pepper

Mix all ingredients in a bowl.
