Slow Cooked Pork Tenderloin with Potatoes, Carrots and Onion

I wasn't going to add the recipe for what we had last night, however when at the park today with my..well Vanley's playgroup, one of the moms said it is exactly the kind of recipe she needs. Here you go...as always, change it up, add what you like, most of all ENJOY!!

Slow Cooked Pork Tenderloin

1 Pkg Pork Tenderloin-2 loins come in package
10 Small/Medium Red Potatoes-quartered
1/2 Bag Baby Carrots
1 Medium Onion-diced
4 Stalk Celery-diced
1 Pot Roast seasoning packet
1 15oz Can Tomato Sauce
1/4 Cup Chicken Broth
1/4 Cup Red Wine
Salt and Pepper

Trim fat from pork and season with salt and pepper. Sear in hot saute pan. Add veggies to pan and cook for 5 minutes. Add red wine, allow to reduce to almost nothing. In a small bowl combine sauce packet, tomato sauce and chicken broth. Pour mixture in pan. Cover and cook on 275 for 1 hour 45 minutes. I use a Le Creuset to cook this dish...use a heavy pan that has a lid.
