Shrimp Gnocchi with Asparagus and Smoked Turkey Bacon


After all the dust has settled from July 4th I am back in business in the kitchen. I have been cooking really easy things that are not suitable for the blog; salad, tacos(out of a box) and grilled meat, etc. I did however make a really delicious dinner when my son's God Father came for dinner. My son was recently baptized and it was such a joyous occasion for our entire family.
I have also been going to the local Farmer's market on Saturday mornings. All I can say about it is....WONDERFUL. The prices are fantastic and everything is organic. I am using the produce to make Vanley's baby food, and also enjoying it myself. You should see the size of the zucchini. In fact, I will take a picture of one and add it to this post!

Sweet Potato, Russet Potato Gnocchi with Shrimp, Asparagus and Smoked Turkey Bacon

1 Russet Potato-baked
1 Sweet Potato-baked
2 Egg Yolks
2 Cups Flour
1 Bunch Asparagus- cut on the bias
11/2lbs Shrimp-peeled and deveined, tail off
2 Tbsp Olive Oil
1/4 Cup White Wine
4 Slices Smoked Turkey Bacon-diced (you can you use regular bacon if you like)
3 Cloves Garlic-diced
1 Cup Chicken Broth

Allow potato to cool. Scoop potato onto counter. Make a well in the center of potato and sprinkle with flour. Add the egg yolk and a pinch of salt to the well. Pull the potato into the well with a fork. Once your egg is mixed in, slowly knead your dough. Tear in half and roll out into long skinny roll. Cut the roll into 1-inch long pieces. Repeat process with sweet potato. Boil a pot of water and slowly add in gnocchi. Once they float, remove them. Set cooked gnocchi aside.

In a saute pan, heat olive oil. Add in garlic and cook for 2-3 minutes, or until golden. Add in shrimp. Cook shrimp until pink, about 7 minutes. Remove shrimp from pan. Add turkey bacon and asparagus and cook for 5-7 minutes. Add in white wine and reduce for 3 minutes. Return shrimp to pan and add chicken broth and gnocchi. Simmer for 5 minutes and serve.

This recipe is a little more labor intensive than most, however it is worth the extra work. Please comment if you have any questions. Enjoy!
