Indian Spiced Chicken with Mango Cucumber Relish, Sweet Potato Jasmine Rice
This was such a delicious dinner. Enjoy!
Indian Spiced Grilled Chicken with Mango Cucumber Relish
3 Chicken Breast
1 tsp Curry
1 tsp Turmeric
1/2 tsp Paprika
1/2 tsp Ground Ginger
1/2 tsp Salt
Preheat grill to 350. Mix all dry ingredients on a plate and a dredge chicken breast through the mixture, coating on each side of breasts. Put on grill and cook for 7 minutes, turn and cook another 7-10 minutes.
Mango Cucumber Relish
1 Mango-peeled and diced
1 Medium Cucumber-peeled and diced
2 Green Onion-chopped
1 Tbsp Mint-chopped
Juice of 1/2 Lime
1 Squirt Srarachi
Mix all ingredients in a bowl and serve over chicken.
Sweet Potato Jasmine Rice
1 Cup Sweet Potato-diced
3/4 Cup Jasmine Rice
1 tsp Mustard Seeds
1 1/4 Cup Chicken Broth
1 tsp Corainder
1/2 tsp Cumin
1/4 tsp Salt
In sauce pot heat drizzle of olive oil on medium heat. Add mustard seeds. When they begin to pop, cover pot and wait until popping stops. Add sweet potato, rice and chicken broth. Bring to a boil, reduce heat to low and cover. Cook for about 20 minutes. Add corainder, cumin and salt. Serve
