Ground Turkey Tostada with Black Bean and Corn Relish
1 lb Ground Turkey
1/2 tsp Garlic Powder
2 tsp Cumin
2 tsp Chili Powder
1/4 tsp Paprika
1/2 tsp Salt
Splash of water
8 Corn Tortillas
Preheat oven to 350. Put tortillas on a cookie sheet and bake for 7-10 minutes. Remove and set aside. Brown turkey in a saute pan, drain and return to pan. Add dry seasoning and a splash of water. Cook for 5 minutes on medium low heat.
Black Bean and Corn Relish
1 Can Black Beans
1 Can Corn- or 3 Ears of Fresh
2 Roma Tomatoes-diced
1 Green Onion-chopped
2 Tbsp Cilantro-chopped
1/2 tsp Cumin
1 Squirt of Srarachi-more if you like it hot
1 Lime-juiced
Mix all ingredients in a bowl and serve. You will have leftovers. I normally eat with chips.
Optional Condiments: shredded lettuce, cheese, sour cream, diced avocado
