Edamame Salad



Edamame Salad
Serves 6

1 bag Edamame-shelled
1 Cup Carrots-shredded
1/2 Cup Red Onion-sliced
1/4 Cup Cilantro-chopped
1/4 Cup Rice Wine Vinegar
1/2 tsp salt
1/4 tsp pepper
Drizzle of Olive Oil
Srachi-this is optional. I like it spicy so I add a few squirts.

Bring a pot of salted water to a boil, add edamame and cook for 10 minutes. Drain edamame and cool. In a bowl mix together all the ingredients, with the oil being the last thing you add. Chill and serve.
