Grilled Pork Chop with White Bean and Spinach Ragout


Pork Chops with White Bean and Spinach Ragout
Serves 2

2 Boneless Pork Chops
1 Can Cannellini Beans-rinsed
2 Tbsp Red Onion-diced
2-3 Garlic Cloves-chopped
2 Slices Bacon
1/2 Pint Cherry Tomatoes
1 Bag Spinach
1/4 Cup White Wine
1 Cup Chicken Broth
1/2 tsp Salt
1/4 tsp Pepper


Grill pork chops on 400, turning a few times, for 15-20 minutes. Heat saute an on medium, add garlic, onion and bacon. Saute until bacon is crisp and garlic and onion are aromatic. Add cherry tomatoes and cook for 5 minutes. Add beans and white wine. Reduce wine for 5 minutes. Add spinach and chicken broth. Cover and simmer for 15-20 minutes. Watch the liquid, you do not want it to reduce to nothing, and feel free to add a little more stock if you think this is happening. Season with salt and pepper.
