Italian Ground Turkey Sausage with Eggplant and White Beans over Penne


Pasta, Pasta and more pasta. I have been addicted to pasta lately. Hope you enjoy the recipe below.

Ground Turkey Sausage with Eggplant and White Beans over Penne

1 1/2 lb Ground Italian Turkey Sausage-I use links and just squeeze meat out of casing
1 Cup Diced Eggplant
2 Cups Spinach-fresh
1 Pint Cherry Tomatoes-cut in half
1 Can White Beans
3 Garlic Cloves-diced
1 lb Whole Wheat Penne
1Tbsp Olive Oil
1/4 Cup White Wine
1/4 Cup Balsamic Vinegar
1/4 Cup Chicken Broth
Juice of 1 Lemon
1/4 tsp Crushed Red Pepper
1/2 tsp Salt
1/4 tsp Cracked Black Pepper

Boil pasta and set aside. Saute ground turkey. Drain and set aside. Heat olive oil in saute pan and add garlic, cook for 2-3 minutes. Add eggplant and cook for another 2-3 minutes. Add Cherry tomatoes and cook a few minutes, until they start to breakdown. Add Spinach and white beans. When spinach starts to wilt, add white wine and balsamic vinegar. Simmer for 5 minutes and add chicken broth. Add turkey to pan and cook for 10 minutes. Season with crushed red pepper, salt and pepper. Pour over pasta.
