Pumpkin Apple Muffins
Pumpkin Apple Muffins
Makes 6 dozen mini muffins
2 Cup Whole Wheat Flour
1 Cup All Purpose Flour
2 tsp Baking Powder
2 tsp Baking Soda
2 tsp Cinnamon
1 1/2 tsp Pumpkin Pie Spice
1/4 tsp Salt
2 Cups Pumpkin Puree
3/4 Cup Sugar
1 Cup Dark Brown Sugar
4 Eggs
1/4 Cup Apple Sauce-I used homemade
1 2/3 Cup Buttermilk-I used rice milk mixed with Vinegar
Preheat oven to 350. In a bowl mix together flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt. In a mixer combine sugar and eggs, mix and until smooth and add pumpkin puree and milk. Slowly add in flour. Mix all ingredients, scraping batter of the side of bowl. Spray mini muffins pans with non stick cooking spray. Spoon batter into to tin, leaving 1/4 of space at the top of each muffin. Bake for 15-20 minutes, or until toothpick comes out clean. Enjoy by themselves or top them with a little spiced cream cheese.

Sounds delicious! Have you been able to find pumpkin puree anywhere, or are you making your own? I love cooking/baking with pumpkin, but there has been a shortage and I haven't been able to find it anywhere.
ReplyDeleteSarah, I heard there was a shortage of canned pumpkin puree, but I have found it both times at Publix. I might pick up a couple extra next time I am there. Now I have to find out why there is a shortage! This recipe is actually one of Martha Stewart's that I made a bunch of changes to. I am not much of a baker, but thought I would see how they turned out. They were good and Vanley loves them!
