Tamale Pie
Tamale Pie
Serves 4-6
1 lb Ground Meat-I use turkey
1 Can Corn
1 Can White Beans-use the bean that you like
1 Can Fire Roasted Diced Tomatoes
1 Tbsp Cumin
1 tsp Chili Powder
1/2 tsp Salt
1/2 tsp Pepper
1 Cup Cornmeal
1 Can Green Enchilada Sauce
1/2 Cup Milk-I use rice milk
2 Eggs
1/2 Cup Shredded Cheese-optional
Preheat the oven to 350. Brown ground meat, drain and add back to pan. Rinse corn and beans and add to meat. Add tomatoes, dry spices and cook for 10 minutes on medium heat. In a bowl mix together cornmeal, green chili enchilada sauce, eggs and milk. Pour meat mixture into a 9'x13' casserole dish, add cheese and then pour cornmeal mixture ontop. Bake at 350 for 40 minutes. Enjoy!
