Apricot BBQ Slow Cooked Pork


These tenderloins were delicious. They would be perfect for a pulled pork sandwich with slaw or even a nice soft taco. Enjoy!

Apricot BBQ Slow Cooked Pork
Serves 6-8

2 Tenderloins-cleaned(about 3 lbs total)
1/2 Cup Low Sugar Apricot Preserves
1/2 Cup BBQ Sauce
1/4 Cup Tomato Sauce
4 Tbsp Chow Chow-I used the hot
1/2 tsp Salt
1/4 tsp Pepper

Preheat oven to 250. Season tenderloins with salt and pepper. Heat heavy bottom pan. Sear pork on each side for 5 minutes. Mix all wet ingredients in a bowl and pour of pork. Cover and cook for 2-2.5 hours. Using 2 forks, pull pork apart and coat with sauce in pan.
