Chicken Lime Soup with Corn and White Beans


Chicken Lime Soup with Corn and White Beans

Serve 4-6

2 Chicken Breast-diced large
1/2 Cup Yellow Onion-diced
1 Can Corn
1 Can Great Northern Beans
2 32oz Chicken Broths
1/4 tsp Paprika
1/4 tsp Cumin
Dash Cayenne
1/2 tsp Salt
2 Limes-juiced

Garnish
2 Green Onion-chopped
1/4 Cup Cilantro
1 Roma Tomato-diced
1 Avocado-diced
6 Corn Tortillas-cut into threads and baked
Tabasco

Heat a large stock pot on medium high with olive oil or cooking spray. Add onions and caramelize. When onions start to turn brown, add chicken. Cook for 5 minutes. Add broth, corn, beans and spices. Simmer for 30 minutes. Add lime juice. Ladle into bowls and garnish with toppings of your choice. Enjoy!
