Paperdalle with Italian Turkey Sausage, Arugula, Diced Tomato in Red Wine Sauce
Serves 4
1 8oz Package Paperdalle(thick egg noodle pasta)-cooked according to package
3 Italian Turkey Sausage links-boiled, casing removed and sliced
3 Medium Tomatoes-diced
2 Cups Arugula
4 Garlic Cloves-chopped
1/4 Cup Red Wine
1 tsp Olive Oil
Salt and Pepper to taste
Heat saute pan on medium, add olive and garlic. Cook garlic until aromatic and add in sausage, arugula and pasta. Cook for a few minutes, add diced tomato and red wine. Let reduce for 8 minutes. Season with salt and pepper. Sprinkle with parmesan if you would like. Enjoy!
